BLACK BEANS SALAD: In a large bowl, gently combine EBO Organic Black Beans, a can of corn, a chopped spring onion, sliced jalapeños, diced fresh tomatoes (or red capsicum), lime juice, and olive oil. Then gently fold in a chopped avocado or two. Add salt and pepper to taste. Garnish with chopped coriander and enjoy!
